The Capocollo Suino Nero Pugliese is an exceptional sausage made from the Apulian black pig raised on pasture in the Martina Franca area, and obtained from the muscular band of the pig located between the head and the vertebral area.
The unmistakable aroma of Martina Franca capocollo is due to the pig fed on acorns, and to the smoking with Fragno bark, an oak widespread in the area, and with almond husk, which give the product a delicate and pleasant smokiness.
Matured in natural underground cellars. “Short supply chain cured meat”, obtained from Pugliese Black Pigs raised on pasture in the woods of Martina Franca, characterized by Fragno trees whose acorns enrich the pig's diet, and whose bark is used in the natural smoking of the cured meat.
The final result is a characteristic aromatic imprint linked to the territory.
