Those families for centuries have passed the knowledge of ancient harvesting traditions for handpicked olives that were cold squeezed by using old stone grinders to extract precious oils with a unique scent and flavor. Those oils take part in the dressing of food preparations all over the world.

Puglia, thanks to its Mediterranean climate and the composition of its soil, stands out in the category of producers of Extra Virgin Olive Oil.

There is a wide range of cultivars present in its territory, from bitter and spicy "coratina" to" barese ogliarola" with a delicate taste, to "leccese ogliarola" with a slightly spicy fruity flavor, to "peranzana"; to name a few of the main ones.
