The wholemeal strascinate produced by Hello Puglia thanks to the careful selection of raw materials and the use in the production of the best durum wheat semolina in addition to water from our land, represent one of the most loved dishes of the Apulian tradition.
The strascinate take their name from the way in which the housewives swiped the fingers of one hand to make a magical piece of pasta with one smooth part and the other hollow and irregular so as to better collect the sauce.
Tradition dictates that the best combination is with an excellent homemade tomato puree and strong ricotta or scuanta as it is better known in Puglia due to its strong and decisive flavour.
INGREDIENTS: 50% wholemeal durum wheat semolina, 50% durum wheat semolina and water.
